- 1 ½ cups graham cracker crumbs

- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- Topping:
- 1 cup whipped cream
- Additional lemon zest for garnish
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then remove from the oven and let it cool.
- In a large bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix until creamy.
- Add eggs one at a time, mixing well after each addition. Then, mix in sour cream, lemon juice, and lemon zest until fully combined.

- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Refrigerate for at least 4 hours, preferably overnight, before serving.
- Top with whipped cream and additional lemon zest before slicing and serving.
