    • 1 ½ cups graham cracker crumbs
    • ½ cup unsalted butter, melted
    • ¼ cup granulated sugar
  • Filling:
    • 16 oz cream cheese, softened
    • 1 cup granulated sugar
    • 3 large eggs
    • 1 cup sour cream
    • 1/4 cup fresh lemon juice
    • 1 tablespoon lemon zest
  • Topping:
    • 1 cup whipped cream
    • Additional lemon zest for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan.
  3. Bake the crust for 10 minutes, then remove from the oven and let it cool.
  4. In a large bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix until creamy.
  5. Add eggs one at a time, mixing well after each addition. Then, mix in sour cream, lemon juice, and lemon zest until fully combined.
  6. Pour the filling over the cooled crust and smooth the top with a spatula.
  7. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  8. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  9. Refrigerate for at least 4 hours, preferably overnight, before serving.
  10. Top with whipped cream and additional lemon zest before slicing and serving.
