Description

Korean BBQ Meatball Rice Bowls are a delicious and flavorful dish that combines tender meatballs with a savory Korean BBQ sauce, served over a bed of rice and topped with fresh vegetables.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 cups cooked rice
  • 1 cup mixed vegetables (carrots, bell peppers, broccoli)
  • Sesame seeds for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, green onions, garlic, and egg. Mix well and form into meatballs.
  3. Place meatballs on a baking sheet and bake for 20 minutes or until cooked through.
  4. In a small saucepan, combine soy sauce, brown sugar, sesame oil, and rice vinegar. Heat over medium heat until sugar is dissolved.
  5. Once meatballs are cooked, toss them in the BBQ sauce until well coated.
  6. Serve meatballs over cooked rice and top with mixed vegetables and sesame seeds.
