- 2 tbsp jerk seasoning
- 1/2 cup breadcrumbs

- 1 egg, beaten

- For the Coconut Curry Sauce:
- 1 can (14 oz) coconut milk
- 1 tbsp red curry paste
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp ginger, grated
- 1 clove garlic, minced
- 1/2 cup chicken broth
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground beef, jerk seasoning, breadcrumbs, green onions, egg, and salt. Mix until well combined.
- Form the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
- Bake the meatballs in the preheated oven for 20 minutes or until browned and cooked through.
- While the meatballs are baking, prepare the coconut curry sauce. In a saucepan over medium heat, combine coconut milk, red curry paste, soy sauce, lime juice, ginger, garlic, and chicken broth.
- Bring the sauce to a simmer and cook for 5-7 minutes, stirring occasionally, until slightly thickened.
- Once the meatballs are done, add them to the coconut curry sauce and simmer for an additional 5 minutes.
- Serve hot, garnished with fresh cilantro if desired.
