    • 2 tbsp jerk seasoning
    • 1/2 cup breadcrumbs

    • 1 egg, beaten
    • 1 tsp salt
  • For the Coconut Curry Sauce:
    • 1 can (14 oz) coconut milk
    • 1 tbsp red curry paste
    • 1 tbsp soy sauce
    • 1 tbsp lime juice
    • 1 tsp ginger, grated
    • 1 clove garlic, minced
    • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, jerk seasoning, breadcrumbs, green onions, egg, and salt. Mix until well combined.
  3. Form the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for 20 minutes or until browned and cooked through.
  5. While the meatballs are baking, prepare the coconut curry sauce. In a saucepan over medium heat, combine coconut milk, red curry paste, soy sauce, lime juice, ginger, garlic, and chicken broth.
  6. Bring the sauce to a simmer and cook for 5-7 minutes, stirring occasionally, until slightly thickened.
  7. Once the meatballs are done, add them to the coconut curry sauce and simmer for an additional 5 minutes.
  8. Serve hot, garnished with fresh cilantro if desired.
