Ingredients
- Potatoes: 2 pounds baby potatoes, halved
- Jalapeños: 2 fresh jalapeños, diced (seeds removed for less heat)
- Bacon: 6 slices, cooked and crumbled
- Cheese: 1 cup shredded cheddar cheese
- Green Onions: 1/2 cup, chopped
- Dressing: 1 cup mayonnaise, 1/2 cup sour cream, 1 tablespoon lime juice, 1 teaspoon garlic powder, salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper until evenly coated.
- Spread the potatoes on a baking sheet in a single layer and roast for 25-30 minutes, or until golden brown and crispy, flipping halfway through.
- While the potatoes are roasting, prepare the dressing by whisking together mayonnaise, sour cream, lime juice, garlic powder, salt, and pepper in a separate bowl.
