Description

Ingredients

  • Potatoes: 2 pounds baby potatoes, halved
  • Jalapeños: 2 fresh jalapeños, diced (seeds removed for less heat)
  • Bacon: 6 slices, cooked and crumbled
  • Cheese: 1 cup shredded cheddar cheese
  • Green Onions: 1/2 cup, chopped
  • Dressing: 1 cup mayonnaise, 1/2 cup sour cream, 1 tablespoon lime juice, 1 teaspoon garlic powder, salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper until evenly coated.
  3. Spread the potatoes on a baking sheet in a single layer and roast for 25-30 minutes, or until golden brown and crispy, flipping halfway through.
  4. While the potatoes are roasting, prepare the dressing by whisking together mayonnaise, sour cream, lime juice, garlic powder, salt, and pepper in a separate bowl.
  5. Once the potatoes are done, let them cool for about 10 minutes before combining them with the dressing, jalapeños, crumbled bacon, cheddar cheese, and green onions.
  6. Mix gently until everything is well combined, then transfer to a serving dish.
  7. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
