    • 1 cup granulated sugar
    • 3 large eggs
    • 1 tsp vanilla extract
    • ½ cup sour cream
    • ½ cup honey
  • For the topping:
    • ½ cup chopped walnuts
    • ¼ cup honey
    • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix melted butter with chopped walnuts and set aside.
  3. Layer 6 sheets of phyllo dough in a greased 9-inch springform pan, brushing each layer with melted butter.
  4. Sprinkle a layer of the walnut mixture over the phyllo, then add 2 more sheets of phyllo, repeating until all the mixture is used.
  5. In a separate bowl, beat cream cheese and sugar until smooth, then add eggs one at a time, mixing well after each addition.
  6. Stir in vanilla extract, sour cream, and honey until fully combined.
  7. Pour the cheesecake filling over the phyllo crust and smooth the top.
  8. Bake for 50-60 minutes, or until the center is set and the edges are lightly golden.
  9. Let cool at room temperature for 1 hour, then refrigerate for at least 4 hours before serving.
  10. Before serving, mix chopped walnuts, honey, and cinnamon for the topping and sprinkle over the cheesecake.
