Description

These Honey Chili Halloumi Spring Rolls are a delightful fusion of crispy textures and vibrant flavors. The golden-brown exterior gives way to a juicy, slightly chewy halloumi filling, enhanced by a sweet and spicy honey chili glaze that tantalizes the taste buds.

Ingredients

Scale
  • For the Spring Rolls:
    • 8 rice paper wrappers
    • 200g halloumi cheese, sliced into thin strips
    • 1 cup shredded carrots
    • 1 cup cucumber, julienned
    • 1 cup fresh mint leaves
    • 1 cup fresh cilantro leaves
  • For the Honey Chili Glaze:
    • 3 tablespoons honey
    • 1 tablespoon soy sauce
    • 1 teaspoon chili flakes
    • 1 teaspoon sesame oil

Instructions

  1. In a small saucepan, combine honey, soy sauce, chili flakes, and sesame oil. Heat over low heat until well mixed, about 2-3 minutes. Set aside.
  2. Prepare a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until soft.
  3. Place the softened wrapper on a clean surface. In the center, layer a few strips of halloumi, shredded carrots, cucumber, mint, and cilantro.
  4. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top. Repeat with remaining wrappers and filling.
  5. Heat a non-stick skillet over medium heat and lightly grease with oil. Place the spring rolls seam-side down and cook for 2-3 minutes on each side until golden brown.
  6. Drizzle the honey chili glaze over the cooked spring rolls before serving.

Notes

  • Make-ahead: You can prepare the spring rolls a few hours in advance and store them in the refrigerator, covered with a damp cloth to prevent drying out.
  • Storage: Store any leftover spring rolls in an airtight container in the fridge for up to 2 days.
  • Substitutions: For a vegan option, replace halloumi with tofu and use agave syrup instead of honey.
