Description

Warm, homemade sourdough Runzas filled with seasoned beef, cabbage, and melted cheese, wrapped in a flaky crust.


Ingredients

  • 2 cups sourdough starter
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 pound ground beef
  • 1 cup cabbage, chopped
  • 1 onion, chopped
  • 1 cup shredded cheese
  • 1 egg (for egg wash)

Instructions

  1. Combine the sourdough starter, flour, salt, sugar, milk, and melted butter in a large mixing bowl. Mix until a dough forms, then knead for 5-10 minutes.
  2. Cover the dough with a cloth and let it rise for 1-2 hours, until doubled in size.
  3. Heat a skillet over medium heat and add ground beef, onion, and cabbage. Cook until browned and tender, about 8-10 minutes. Stir in shredded cheese and set aside to cool.
  4. Preheat the oven to 375°F (190°C).
  5. Roll the risen dough on a floured surface to 1/4-inch thick and cut into 4-inch squares.
  6. Place a spoonful of the beef mixture in the center of each square, then fold and pinch to seal.
  7. Arrange on a greased baking sheet and brush tops with beaten egg.
  8. Bake for 20-25 minutes or until golden brown.
  9. Let cool slightly before serving warm.

Notes

For a lighter option, substitute ground beef with turkey or a plant-based alternative. Experiment with different cheeses for variety.
