Warm, homemade sourdough Runzas filled with seasoned beef, cabbage, and melted cheese, wrapped in a flaky crust.

- 2 cups sourdough starter
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 pound ground beef
- 1 cup cabbage, chopped
- 1 onion, chopped
- 1 cup shredded cheese
- 1 egg (for egg wash)
Instructions
- Combine the sourdough starter, flour, salt, sugar, milk, and melted butter in a large mixing bowl. Mix until a dough forms, then knead for 5-10 minutes.
- Cover the dough with a cloth and let it rise for 1-2 hours, until doubled in size.
- Heat a skillet over medium heat and add ground beef, onion, and cabbage. Cook until browned and tender, about 8-10 minutes. Stir in shredded cheese and set aside to cool.
- Preheat the oven to 375°F (190°C).
- Roll the risen dough on a floured surface to 1/4-inch thick and cut into 4-inch squares.
- Place a spoonful of the beef mixture in the center of each square, then fold and pinch to seal.
- Arrange on a greased baking sheet and brush tops with beaten egg.
- Bake for 20-25 minutes or until golden brown.
- Let cool slightly before serving warm.
Notes
For a lighter option, substitute ground beef with turkey or a plant-based alternative. Experiment with different cheeses for variety.
