Heaven on Earth Cake is a luscious dessert that combines layers of fluffy cake, creamy whipped topping, and a medley of fresh fruits.   • Cake:
    • 1 ½ cups all-purpose flour
    • 1 cup granulated sugar
    • ½ cup unsalted butter, softened
    • 2 large eggs
    • 1 cup milk
    • 2 tsp baking powder
    • 1 tsp vanilla extract
  • Whipped Topping:
    • 2 cups heavy whipping cream
    • ½ cup powdered sugar
    • 1 tsp vanilla extract
  • Fruit Layer:
    • 1 cup sliced strawberries
    • 1 cup diced peaches

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, combine the flour and baking powder, then gradually add to the creamed mixture, alternating with the milk.
  5. Pour the batter into a greased 9-inch round cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. While the cake cools, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  7. Once the cake is completely cool, slice it in half horizontally to create two layers.
  8. Spread a layer of whipped cream on the bottom layer, then top with sliced strawberries and diced peaches. Place the second layer on top and repeat the process.
  9. Finish with a generous layer of whipped cream on top and garnish with additional fruit.
