Description

This Hearty Beef and Potato Stew is a warm embrace on a chilly day, featuring tender chunks of beef simmered to perfection in a rich, savory broth. The potatoes add a creamy texture, while the aromatic herbs and spices create a comforting flavor experience that lingers on the palate.

Ingredients

Scale
  • Beef: 2 pounds chuck roast, cut into 1-inch cubes
  • Vegetables:
    • 4 medium potatoes, peeled and diced
    • 3 carrots, sliced
    • 2 stalks celery, chopped
    • 1 onion, diced
  • Broth: 4 cups beef broth
  • Herbs & Spices:
    • 2 cloves garlic, minced
    • 1 teaspoon dried thyme
    • 1 bay leaf
    • Salt and pepper to taste
  • Thickener: 2 tablespoons all-purpose flour (optional)

Instructions

  1. In a large pot, heat 2 tablespoons of oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes.
  2. Add the diced onion and garlic, cooking until the onion is translucent, about 3 minutes.
  3. Stir in the flour (if using) and cook for 1 minute to coat the beef.
  4. Pour in the beef broth, scraping the bottom of the pot to release any browned bits.
  5. Add the potatoes, carrots, celery, thyme, bay leaf, salt, and pepper.
  6. Bring the stew to a boil, then reduce the heat to low and cover. Simmer for 1.5 to 2 hours, or until the beef is tender and the flavors meld.
  7. Remove the bay leaf before serving. Adjust seasoning as needed.

Notes

  • This stew can be made a day in advance; the flavors deepen overnight.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a gluten-free option, substitute flour with cornstarch or omit it entirely.
