- 1 pound fresh green beans, trimmed
- 1 cup mushrooms, sliced
- 1 cup low-sodium vegetable broth
- 1 cup Greek yogurt
- 1 cup whole wheat breadcrumbs
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large pot, bring water to a boil and blanch the green beans for 3-4 minutes. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add mushrooms to the skillet and cook until softened.
- In a bowl, mix the Greek yogurt and vegetable broth until smooth. Season with salt and pepper.
- Combine the green beans, mushroom mixture, and yogurt sauce in a baking dish.
- Top with whole wheat breadcrumbs.
- Bake for 25-30 minutes or until the top is golden brown.
Notes
- For a vegan version, substitute Greek yogurt with a plant-based yogurt.
- Feel free to add other vegetables like carrots or bell peppers for extra flavor.
