Ingredients

  • 2 cups almond flour
  • 1 cup grated zucchini
  • 3 large eggs
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the almond flour, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the eggs, honey (or maple syrup), and melted coconut oil.
  4. Add the grated zucchini to the wet ingredients and mix well.
  5. Combine the wet and dry ingredients until just mixed. Fold in walnuts if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  8. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
