- 2 cups almond flour
- 1 cup grated zucchini
- 3 large eggs
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix the almond flour, baking soda, salt, and cinnamon.
- In another bowl, whisk together the eggs, honey (or maple syrup), and melted coconut oil.
- Add the grated zucchini to the wet ingredients and mix well.
- Combine the wet and dry ingredients until just mixed. Fold in walnuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Store leftovers in an airtight container in the refrigerator for up to a week.
- This bread can be frozen for up to 3 months.
- Feel free to add chocolate chips or dried fruit for extra flavor.
