Ingredients

Scale
  • Cake:
    • 2 cups all-purpose flour
    • 1 ½ cups granulated sugar
    • 1 cup unsweetened crushed pineapple, drained
    • ½ cup unsalted butter, softened
    • 1 cup buttermilk
    • 3 large eggs
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • ½ teaspoon salt
  • Frosting:
    • 1 cup unsalted butter, softened
    • 4 cups powdered sugar
    • 1 teaspoon vanilla extract
    • 2 tablespoons heavy cream
    • ½ cup toasted coconut flakes (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the crushed pineapple and buttermilk until well combined.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Pour the batter into a greased 9×13 inch baking pan and smooth the top.
  8. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool completely in the pan on a wire rack.
  10. For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar, vanilla extract, and heavy cream until smooth and fluffy.
  11. Spread the frosting evenly over the cooled cake and sprinkle with toasted coconut flakes.
