Ingredients

- 1 cup quinoa
- 2 cups chicken broth
- 2 chicken breasts, cooked and diced
- 1 cup roasted sweet potatoes, cubed
- 1 cup kale, chopped
- 1/2 cup cranberries
- 1/4 cup walnuts, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and chicken broth; bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
- In a large bowl, combine cooked quinoa, diced chicken, roasted sweet potatoes, kale, cranberries, and walnuts.
