Description

These Grinch Mini Cheesecakes are a delightful blend of creamy, rich cheesecake with a hint of tanginess, all nestled in a buttery graham cracker crust.   • Crust:
    • 1 cup graham cracker crumbs
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter, melted
  • Cheesecake Filling:
    • 16 oz cream cheese, softened
    • 1/2 cup granulated sugar
    • 1 tsp vanilla extract
    • 2 large eggs
    • 1/4 cup sour cream
    • 1/4 cup green food coloring
  • Topping:
    • 1 cup heavy whipping cream
    • 2 tbsp powdered sugar
    • Red candy hearts for decoration

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of a muffin tin lined with cupcake liners.
  4. In a large mixing bowl, beat the cream cheese until smooth. Add sugar and vanilla, mixing until combined.
  5. Add eggs one at a time, mixing well after each addition. Then, mix in sour cream and green food coloring until fully incorporated.
  6. Pour the cheesecake filling over the crusts, filling each liner about 3/4 full.
  7. Bake for 18-20 minutes, or until the edges are set but the center is slightly jiggly.
  8. Remove from the oven and let cool completely before refrigerating for at least 4 hours.
  9. Before serving, whip the heavy cream with powdered sugar until stiff peaks form. Pipe onto each cheesecake and top with red candy hearts.
