Instructions
- In a bowl, combine olive oil, minced garlic, smoked paprika, cumin, salt, and pepper to create the marinade.
- Add the shrimp to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
- While the shrimp marinates, prepare the corn salsa by mixing corn, red bell pepper, red onion, cilantro, lime juice, and salt in a separate bowl.
- Preheat the grill to medium-high heat (about 400°F).
- Thread the marinated shrimp onto skewers and grill for 2-3 minutes on each side, or until they turn pink and opaque.
- In a small bowl, whisk together the ingredients for the creamy garlic sauce until smooth.
