- 4 ripe peaches, halved and pitted
- 1 cup ricotta cheese
- 1/4 cup honey
- 1 teaspoon vanilla extract
- Fresh mint leaves for garnish
Instructions
- Preheat the grill to medium heat.
- Brush the peach halves with a little olive oil.
- Place the peaches cut-side down on the grill and cook for about 4-5 minutes until grill marks appear.
- In a bowl, mix the ricotta cheese, honey, and vanilla extract until well combined.
- Remove the peaches from the grill and place them cut-side up on a serving platter.
- Top each peach half with a generous dollop of the ricotta mixture.
- Drizzle additional honey over the top and garnish with fresh mint leaves.
