Grilled Lemon Herb Chicken Breasts are a delicious and healthy dish, marinated in a zesty lemon and herb mixture, perfect for summer grilling.

- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 lemons, juiced and zested
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper.
- Place chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours.
- Preheat the grill to medium-high heat.
- Remove chicken from the marinade and discard the marinade.
- Grill chicken for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before slicing and serving.
Notes
- For extra flavor, marinate the chicken overnight.
- Serve with grilled vegetables or a fresh salad.
- This recipe can be easily doubled for larger gatherings.
