Description

Indulge in the creamy richness of Grilled Chicken Alfredo Rice Bowls, where tender, marinated chicken meets a velvety Alfredo sauce. Each bite offers a delightful contrast of textures, from the juicy chicken to the fluffy rice, all enveloped in a savory, cheesy embrace.

Ingredients

Scale
  • For the Grilled Chicken:
    • 2 boneless, skinless chicken breasts
    • 2 tablespoons olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon Italian seasoning
    • Salt and pepper to taste
  • For the Alfredo Sauce:
    • 1 cup heavy cream
    • 1/2 cup grated Parmesan cheese
    • 2 tablespoons unsalted butter
    • 2 cloves garlic, minced
    • Salt and pepper to taste
  • For the Rice:
    • 1 cup long-grain white rice
    • 2 cups chicken broth
  • Garnish:
    • Fresh parsley, chopped
    • Extra Parmesan cheese

Instructions

  1. Marinate the chicken breasts in olive oil, garlic powder, Italian seasoning, salt, and pepper for at least 30 minutes.
  2. Preheat the grill to medium-high heat (about 375°F).
  3. Grill the chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F. Remove from grill and let rest for 5 minutes before slicing.
  4. In a saucepan, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese, salt, and pepper, cooking until the sauce thickens (about 3-5 minutes).
  6. In a separate pot, combine rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed.
  7. To assemble, place a serving of rice in a bowl, top with sliced grilled chicken, and drizzle with Alfredo sauce. Garnish with parsley and extra Parmesan.

Notes

  • This dish can be made ahead; store the grilled chicken and Alfredo sauce separately in airtight containers in the refrigerator for up to 3 days.
  • Reheat the chicken on the grill or in a skillet, and warm the sauce gently on the stove.
  • For a lighter version, substitute heavy cream with half-and-half or a plant-based cream alternative.
