Ingredients

  • Green Beans: 1 pound, trimmed and cut into 1-inch pieces
  • Mushroom Soup: 2 cups, preferably homemade or low-sodium
  • Milk: 1/2 cup, whole or low-fat
  • Onion: 1 medium, finely chopped
  • Garlic: 2 cloves, minced
  • Fried Onions: 1 cup, for topping
  • Salt: 1 teaspoon
  • Pepper: 1/2 teaspoon
  • Cheddar Cheese: 1 cup, shredded (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring salted water to a boil and blanch the green beans for 5 minutes until bright green and slightly tender.
  3. In a large mixing bowl, combine the mushroom soup, milk, chopped onion, minced garlic, salt, and pepper.
  4. Add the blanched green beans to the mixture and stir until well coated.
  5. Transfer the mixture to a greased 9×13 inch baking dish.
  6. If using, sprinkle the shredded cheddar cheese evenly over the top.
  7. Bake in the preheated oven for 25 minutes, or until the casserole is bubbly.
  8. Remove from the oven and sprinkle the fried onions on top, then return to the oven for an additional 10 minutes until the onions are golden brown.
