Ingredients
- Green Beans: 1 pound, trimmed and cut into 1-inch pieces
- Mushroom Soup: 2 cups, preferably homemade or low-sodium
- Milk: 1/2 cup, whole or low-fat
- Onion: 1 medium, finely chopped
- Garlic: 2 cloves, minced
- Fried Onions: 1 cup, for topping
- Salt: 1 teaspoon
- Pepper: 1/2 teaspoon
- Cheddar Cheese: 1 cup, shredded (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, bring salted water to a boil and blanch the green beans for 5 minutes until bright green and slightly tender.
- In a large mixing bowl, combine the mushroom soup, milk, chopped onion, minced garlic, salt, and pepper.
- Add the blanched green beans to the mixture and stir until well coated.
- Transfer the mixture to a greased 9×13 inch baking dish.
- If using, sprinkle the shredded cheddar cheese evenly over the top.
- Bake in the preheated oven for 25 minutes, or until the casserole is bubbly.
- Remove from the oven and sprinkle the fried onions on top, then return to the oven for an additional 10 minutes until the onions are golden brown.
