Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup parsley, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, feta cheese, parsley, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake the meatballs for 20-25 minutes or until cooked through.
  5. In a saucepan, heat olive oil over medium heat. Add orzo and toast for 2-3 minutes.
  6. Add chicken broth, lemon zest, and lemon juice to the orzo. Bring to a boil, then reduce heat and simmer until orzo is cooked, about 10 minutes.
  7. Serve the meatballs over the lemon orzo and garnish with additional parsley if desired.
