Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease your 9×13 inch baking pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Mix together the flour, baking powder, salt, and cinnamon in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  6. Pour half of the batter into the prepared pan and smooth it out.
  7. Combine the brown sugar and cinnamon in a small bowl.
  8. Sprinkle half of the brown sugar mixture over the batter.
  9. Add the remaining batter on top, then sprinkle with the rest of the brown sugar mixture and nuts (if using).
  10. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  11. Cool slightly before serving.

Notes

For a gluten-free option, substitute the all-purpose flour with a gluten-free blend. This coffee cake tastes even better when made a day in advance.
