- Topping:
- 1/4 cup honey for drizzling
- Extra chopped pistachios for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine flour and butter, mixing until crumbly.
- Add cold water gradually until the dough forms; wrap in plastic and chill for 30 minutes.
- In another bowl, mix ricotta, chopped pistachios, honey, and vanilla until smooth.
- Roll out the chilled dough on a floured surface to 1/8 inch thick.
- Cut into squares and place a spoonful of filling in the center of each square.
- Fold the corners over the filling and pinch to seal.
- Place pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
- Remove from the oven and drizzle with honey and sprinkle with extra pistachios.
