- For the Cookies:
- 1 cup unsalted butter, melted
- 2 cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- For the Topping:
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the melted butter and sugar until well combined.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are set but the centers are still soft.
- While the cookies are baking, prepare the topping by mixing the coconut, pecans, sweetened condensed milk, and vanilla extract in a bowl.
- Remove the cookies from the oven and immediately spoon a small amount of the topping onto each cookie.
- Return the cookies to the oven and bake for an additional 5-7 minutes, until the topping is golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
