Description
A delicious and healthy side dish featuring roasted Brussels sprouts and potatoes, seasoned with garlic and Parmesan cheese.
Ingredients

- 1 lb Brussels sprouts, trimmed and halved
- 1 lb baby potatoes, halved
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 3 tbsp olive oil
- Salt and pepper to taste
- 1 tsp Italian seasoning (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the Brussels sprouts, baby potatoes, minced garlic, olive oil, salt, pepper, and Italian seasoning.
- Toss until the vegetables are well coated.
- Spread the mixture evenly on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and golden brown.
- Remove from the oven and sprinkle with grated Parmesan cheese.
- Return to the oven for an additional 5 minutes to melt the cheese.
- Serve warm and enjoy!
Notes
- For extra flavor, add a squeeze of lemon juice before serving.
- Feel free to substitute other vegetables like carrots or cauliflower.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
