Description

Garlic Mushroom Stuffed Shells are a delightful pasta dish filled with a savory mixture of mushrooms, garlic, and cheese, perfect for a comforting dinner.


Ingredients

  • 12 jumbo pasta shells
  • 2 cups mushrooms, chopped
  • 4 cloves garlic, minced
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add chopped mushrooms and garlic, sautéing until mushrooms are tender.
  4. In a bowl, combine the sautéed mushrooms, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, Italian seasoning, salt, and pepper.
  5. Stuff each cooked pasta shell with the mushroom and cheese mixture.
  6. Spread half of the marinara sauce on the bottom of a baking dish.
  7. Place the stuffed shells in the baking dish and top with the remaining marinara sauce and the rest of the mozzarella cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  9. Let cool for a few minutes before serving.

Notes

  • Feel free to add spinach or other vegetables to the stuffing for extra nutrition.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
  • For a vegan version, substitute ricotta and mozzarella with plant-based alternatives.
