  • Diet: Vegetarian

Description

Indulge in the velvety smoothness of garlic mashed potatoes, where each creamy bite is infused with the rich, aromatic essence of roasted garlic. The buttery finish and a hint of salt create a comforting side dish that elevates any meal.

Ingredients

  • Potatoes: 2 pounds, peeled and quartered
  • Garlic: 6 cloves, roasted
  • Butter: 1/2 cup, unsalted
  • Heavy cream: 1/2 cup
  • Salt: 1 teaspoon, to taste
  • Black pepper: 1/2 teaspoon, freshly ground

Instructions

  1. In a large pot, add the quartered potatoes and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat.
  2. Once boiling, reduce heat to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  3. While the potatoes are cooking, roast the garlic by wrapping the cloves in aluminum foil and baking at 400°F (200°C) for 20-25 minutes until soft and caramelized.
  4. Drain the potatoes and return them to the pot. Add the roasted garlic, butter, and heavy cream.
  5. Using a potato masher or ricer, mash the potatoes until smooth and creamy.
  6. Season with salt and black pepper to taste, mixing well to combine.
  7. Serve warm, garnished with a sprinkle of fresh herbs if desired.

Notes

  • Make-ahead: Prepare the mashed potatoes up to a day in advance and store in the refrigerator. Reheat gently on the stove, adding a splash of cream if needed.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Substitutions: For a lighter version, substitute half of the heavy cream with chicken or vegetable broth.
