- 4 chicken breasts
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons butter
- 1 pound carrots, sliced
- 2 tablespoons brown sugar
- 1 tablespoon butter (for carrots)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. Coat the chicken breasts with this mixture.
- Place the chicken in a baking dish and bake for 25-30 minutes or until cooked through.
- Meanwhile, boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and mash them with milk and butter until smooth and creamy.
- In a skillet, melt 1 tablespoon of butter over medium heat. Add sliced carrots and brown sugar, cooking until the carrots are tender and glazed, about 10 minutes.
- Serve the garlic herb chicken alongside the mashed potatoes and glazed carrots.
Notes
- For extra flavor, marinate the chicken for a few hours before cooking.
- Feel free to add other herbs like parsley or oregano.
- Adjust the sweetness of the glazed carrots to your preference.
