Ingredients

  • 4 chicken breasts
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 pound carrots, sliced
  • 2 tablespoons brown sugar
  • 1 tablespoon butter (for carrots)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. Coat the chicken breasts with this mixture.
  3. Place the chicken in a baking dish and bake for 25-30 minutes or until cooked through.
  4. Meanwhile, boil the potatoes in salted water until tender, about 15-20 minutes.
  5. Drain the potatoes and mash them with milk and butter until smooth and creamy.
  6. In a skillet, melt 1 tablespoon of butter over medium heat. Add sliced carrots and brown sugar, cooking until the carrots are tender and glazed, about 10 minutes.
  7. Serve the garlic herb chicken alongside the mashed potatoes and glazed carrots.
