Description

Ingredients

  • Pasta: 8 ounces of rotini or penne pasta, cooked al dente and cooled
  • Vegetables:
    • 1 cup cherry tomatoes, halved
    • 1 cup cucumber, diced
    • 1/2 cup red bell pepper, diced
    • 1/2 cup red onion, finely chopped
  • Ranch Dressing: 1 cup of store-bought or homemade ranch dressing
  • Cheese: 1/2 cup shredded cheddar cheese
  • Herbs: 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente, about 8-10 minutes.
  2. Drain the pasta and rinse under cold water to stop the cooking process. Set aside to cool completely.
  3. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, and red onion.
  4. Add the ranch dressing to the bowl and toss gently until all ingredients are well coated.
  5. Fold in the shredded cheddar cheese and chopped parsley.
  6. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Before serving, give the salad a good stir and adjust seasoning if necessary.
