Ingredients

Scale
  • For the Muffins:
    • 1 cup all-purpose flour
    • 1/2 cup granulated sugar
    • 1/2 cup unsalted butter, softened
    • 2 large eggs
    • 1/2 cup milk
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup shredded cheddar cheese
    • 1 tablespoon Flamin’ Hot seasoning
  • For the Topping:
    • 1/4 cup crushed pretzels
    • 1 tablespoon melted butter
    • 1 tablespoon Flamin’ Hot seasoning

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the milk.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and Flamin’ Hot seasoning.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the shredded cheddar cheese.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. In a small bowl, mix the crushed pretzels with melted butter and additional Flamin’ Hot seasoning, then sprinkle this mixture on top of each muffin.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • These muffins can be made ahead of time and stored in an airtight container for up to 3 days.
  • For longer storage, freeze the muffins in a freezer-safe bag for up to 2 months.
  • Substitute the cheddar cheese with pepper jack for an extra kick.
