- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup chopped fresh cilantro
- 1 lime, cut into wedges
- 1 cup diced onions
- 1 cup diced tomatoes
Instructions
- In a bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Coat the chicken breasts with the spice mixture.
- Heat a skillet over medium heat and cook the chicken for 6-7 minutes on each side until fully cooked.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
- Warm the corn tortillas in the skillet for about 30 seconds on each side.
- Assemble the tacos by placing chicken strips on the tortillas and topping with cilantro, onions, and tomatoes.
- Serve with lime wedges on the side.
Notes
- Feel free to add your favorite toppings like avocado or salsa.
- For a spicier kick, add jalapeños.
- These tacos can be made with leftover chicken as well.
