Description

This Easter Poke Cake is a delightful treat that combines a moist vanilla cake with a vibrant burst of fruity flavors. Each slice reveals a creamy filling that seeps into the cake, creating a luscious texture that melts in your mouth, while the colorful topping adds a festive touch.

Ingredients

Scale
  • Cake:
    • 1 box (15.25 oz) vanilla cake mix
    • 3 large eggs
    • 1 cup water
    • 1/3 cup vegetable oil
  • Filling:
    • 1 cup sweetened condensed milk
    • 1 cup strawberry or raspberry gelatin
  • Topping:
    • 1 cup whipped topping
    • 1 cup fresh strawberries, sliced
    • 1/2 cup shredded coconut (optional)
    • 1/4 cup pastel sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cake mix, eggs, water, and vegetable oil. Beat on medium speed for 2 minutes until well blended.
  3. Pour the batter into a greased 9×13 inch baking pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  4. Remove the cake from the oven and let it cool for 10 minutes.
  5. Using the handle of a wooden spoon, poke holes all over the top of the cake, about 1 inch apart.
  6. In a separate bowl, mix the sweetened condensed milk and gelatin until well combined. Pour this mixture evenly over the cake, ensuring it seeps into the holes.
  7. Refrigerate the cake for at least 2 hours to allow the filling to set.
  8. Before serving, spread the whipped topping over the cake and decorate with sliced strawberries, shredded coconut, and sprinkles.

Notes

  • This cake can be made a day in advance; just keep it covered in the refrigerator.
