Ingredients
Scale
- Cake:
- 1 box (15.25 oz) vanilla cake mix
- 3 large eggs
- 1 cup water
- 1/3 cup vegetable oil
- Filling:
- 1 cup sweetened condensed milk
- 1 cup strawberry or raspberry gelatin
- Topping:
- 1 cup whipped topping
- 1 cup fresh strawberries, sliced
- 1/2 cup shredded coconut (optional)
- 1/4 cup pastel sprinkles
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cake mix, eggs, water, and vegetable oil. Beat on medium speed for 2 minutes until well blended.
- Pour the batter into a greased 9×13 inch baking pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Remove the cake from the oven and let it cool for 10 minutes.
- Using the handle of a wooden spoon, poke holes all over the top of the cake, about 1 inch apart.
- In a separate bowl, mix the sweetened condensed milk and gelatin until well combined. Pour this mixture evenly over the cake, ensuring it seeps into the holes.
- Refrigerate the cake for at least 2 hours to allow the filling to set.
- Before serving, spread the whipped topping over the cake and decorate with sliced strawberries, shredded coconut, and sprinkles.
Notes
- This cake can be made a day in advance; just keep it covered in the refrigerator.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- For a different flavor, substitute the strawberry or raspberry gelatin with lemon or orange gelatin.
