A delightful pasta salad inspired by the classic Dirty Martini, featuring creamy mayonnaise, briny olives, and vibrant flavors.

- 8 oz pasta (your choice)
- 1 cup olives (green or black, sliced)
- 1/2 cup mayonnaise
- 1/4 cup olive brine
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh herbs (like parsley or basil, chopped for garnish)
Instructions
- Cook the pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente. Once done, drain the pasta and set it aside to cool.
- Prepare the dressing: In a large mixing bowl, combine the mayonnaise, olive brine, lemon juice, dried oregano, salt, and pepper. Whisk until smooth.
- Combine ingredients: Add the cooled pasta and sliced olives to the dressing. Fold the mixture until every piece of pasta is coated.
- Taste test: Adjust seasoning if needed.
- Chill: Cover the bowl and refrigerate for at least 30 minutes.
- Garnish & Serve: Just before serving, garnish the salad with fresh herbs.
Notes
This salad is best prepared in advance and can be stored in the refrigerator for 1-2 days. Avoid freezing as mayonnaise doesn’t retain its texture.
