  • 6 hard-boiled eggs
  • 1 cup mayonnaise
  • 2 tablespoons mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Boil the potatoes until tender, then let them cool and dice them.
  2. Peel and chop the hard-boiled eggs, reserving a couple for garnish.
  3. In a large bowl, combine the mayonnaise, mustard, apple cider vinegar, salt, and pepper.
  4. Add the diced potatoes, chopped eggs, celery, and red onion to the bowl and mix gently.
  5. Chill the salad in the refrigerator for at least an hour before serving.
  6. Garnish with paprika and slices of reserved hard-boiled eggs before serving.
