    • 1 lb ground beef (80/20)
  • Beans:
    • 1 can (15 oz) kidney beans, drained and rinsed
    • 1 can (15 oz) black beans, drained and rinsed
  • Vegetables:
    • 1 medium onion, diced
    • 1 bell pepper, diced
    • 2 cloves garlic, minced
  • Liquids:
    • 1 can (28 oz) crushed tomatoes
    • 1 cup beef broth
  • Spices:
    • 2 tbsp chili powder
    • 1 tsp cumin
    • 1 tsp paprika
    • 1/2 tsp cayenne pepper (optional)
    • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat.
  2. Add the cooked beef, diced onion, bell pepper, garlic, kidney beans, black beans, crushed tomatoes, and beef broth to the slow cooker.
  3. Sprinkle in the chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Stir well to combine.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors meld and the chili thickens.
  5. Check for seasoning and adjust salt and pepper as needed before serving.

  • This chili can be made a day in advance and stored in the refrigerator. The flavors will deepen overnight.
