- 1 lb ground beef (80/20)
- Beans:
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- Vegetables:
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- Liquids:
- 1 can (28 oz) crushed tomatoes
- 1 cup beef broth
- Spices:
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat.
- Add the cooked beef, diced onion, bell pepper, garlic, kidney beans, black beans, crushed tomatoes, and beef broth to the slow cooker.
- Sprinkle in the chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Stir well to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors meld and the chili thickens.
- Check for seasoning and adjust salt and pepper as needed before serving.
Notes
- This chili can be made a day in advance and stored in the refrigerator. The flavors will deepen overnight.
