- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably Italian-style)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- For the Garlic Butter Sauce:
- 1/2 cup unsalted butter (1 stick)
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare three shallow dishes: one with flour mixed with salt, pepper, and garlic powder; one with beaten eggs; and one with breadcrumbs mixed with dried oregano.
- Coat each chicken breast in flour, dip in the egg, and then coat with breadcrumbs, pressing gently to adhere.
- Heat a large skillet over medium-high heat and add 1/4 cup of butter. Once melted, add the chicken breasts and cook for 4-5 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
- While the chicken is baking, prepare the garlic butter sauce by melting the remaining butter in a small saucepan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in chopped parsley, lemon juice, and season with salt and pepper. Remove from heat.
- Once the chicken is done, drizzle the garlic butter sauce over the top and serve immediately.
