  • For the Chicken:
    • 4 boneless, skinless chicken breasts (about 1.5 lbs)
    • 1 cup all-purpose flour
    • 2 large eggs
    • 1 cup breadcrumbs (preferably Italian-style)
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon dried oregano
  • For the Garlic Butter Sauce:
    • 1/2 cup unsalted butter (1 stick)
    • 4 cloves garlic, minced
    • 1 tablespoon fresh parsley, chopped
    • 1 tablespoon lemon juice
    • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare three shallow dishes: one with flour mixed with salt, pepper, and garlic powder; one with beaten eggs; and one with breadcrumbs mixed with dried oregano.
  3. Coat each chicken breast in flour, dip in the egg, and then coat with breadcrumbs, pressing gently to adhere.
  4. Heat a large skillet over medium-high heat and add 1/4 cup of butter. Once melted, add the chicken breasts and cook for 4-5 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
  6. While the chicken is baking, prepare the garlic butter sauce by melting the remaining butter in a small saucepan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  7. Stir in chopped parsley, lemon juice, and season with salt and pepper. Remove from heat.
  8. Once the chicken is done, drizzle the garlic butter sauce over the top and serve immediately.
