Description

Crispy chicken quesadillas filled with tender chicken and melted cheese, perfect for a quick meal or snack.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • Optional: sour cream and salsa for serving

Instructions

  1. In a bowl, mix the shredded chicken with taco seasoning, bell peppers, and onions.
  2. Heat a skillet over medium heat and add olive oil.
  3. Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
  4. Add half of the chicken mixture on top of the cheese.
  5. Fold the tortilla over and cook until golden brown, about 3-4 minutes.
  6. Flip and cook the other side until crispy and the cheese is melted.
  7. Remove from skillet and repeat with the remaining tortillas and filling.
  8. Cut into wedges and serve with sour cream and salsa if desired.

Notes

  • For extra flavor, marinate the chicken in lime juice and spices before cooking.
  • Feel free to add other vegetables like spinach or mushrooms.
  • These quesadillas can be made ahead and reheated in the oven.
