Description
Crispy chicken quesadillas filled with tender chicken and melted cheese, perfect for a quick meal or snack.
Ingredients

			- 2 cups cooked chicken, shredded
 - 1 cup shredded cheese (cheddar or Monterey Jack)
 - 4 large flour tortillas
 - 1 tablespoon olive oil
 - 1 teaspoon taco seasoning
 - 1/2 cup diced bell peppers
 - 1/2 cup diced onions
 - Optional: sour cream and salsa for serving
 
Instructions
- In a bowl, mix the shredded chicken with taco seasoning, bell peppers, and onions.
 - Heat a skillet over medium heat and add olive oil.
 - Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
 - Add half of the chicken mixture on top of the cheese.
 - Fold the tortilla over and cook until golden brown, about 3-4 minutes.
 - Flip and cook the other side until crispy and the cheese is melted.
 - Remove from skillet and repeat with the remaining tortillas and filling.
 - Cut into wedges and serve with sour cream and salsa if desired.
 
Notes
- For extra flavor, marinate the chicken in lime juice and spices before cooking.
 - Feel free to add other vegetables like spinach or mushrooms.
 - These quesadillas can be made ahead and reheated in the oven.
