The Creamy Southwest Chicken Skillet is a delightful fusion of tender chicken, vibrant bell peppers, and a rich, creamy sauce that tantalizes the taste buds. Each bite offers a perfect balance of savory spices and a hint of heat, enveloped in a luscious texture that makes it utterly irresistible.

Ingredients

Scale
  • Chicken: 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • Vegetables:
    • 1 red bell pepper, diced
    • 1 green bell pepper, diced
    • 1 small onion, diced
  • Spices:
    • 1 tsp chili powder
    • 1 tsp cumin
    • 1/2 tsp paprika
    • 1/4 tsp cayenne pepper (optional)
  • Sauce:
    • 1 cup heavy cream
    • 1/2 cup chicken broth
    • 1 cup shredded cheddar cheese
  • Garnish:
    • Fresh cilantro, chopped
    • Lime wedges

Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  2. Add the chicken pieces and cook for 5-7 minutes, or until golden brown and cooked through, stirring occasionally.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the diced onion and bell peppers, cooking for 3-4 minutes until softened.
  5. Stir in the spices (chili powder, cumin, paprika, and cayenne) and cook for an additional minute until fragrant.
  6. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  7. Reduce the heat to low and stir in the heavy cream and cheddar cheese, mixing until the cheese is melted and the sauce is creamy.
  8. Add the cooked chicken back to the skillet, stirring to coat in the sauce, and heat through for 2-3 minutes.
  9. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

  • This dish can be made ahead and stored in the refrigerator for up to 3 days.
  • To reheat, warm gently on the stove over low heat, adding a splash of chicken broth if the sauce thickens too much.
  • For a lighter version, substitute heavy cream with Greek yogurt or a dairy-free alternative.
