Instructions
- Combine the ground chicken, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, salt, and pepper in a large mixing bowl.
- Shape the mixture into meatballs, about 1-2 inches in diameter.
- Heat olive oil in a skillet over medium heat until shimmering.
- Add the meatballs to the skillet and cook until browned on all sides, about 8-10 minutes.
- Reduce the heat to low and pour in the heavy cream, stirring gently to coat the meatballs.
- Stir in the chopped sun-dried tomatoes and sprinkle in the Italian seasoning.
- Simmer for around 10 minutes, allowing the flavors to meld.
