Ingredients

  • 1 cup powdered sugar
  • 2 large eggs

  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  3. Press the mixture into the bottom of a greased 9×9 inch baking dish.
  4. In another bowl, beat the cream cheese until smooth.
  5. Add powdered sugar, eggs, vanilla extract, lemon juice, and lemon zest; mix until well combined.
  6. Pour the cheesecake mixture over the crust in the baking dish.
  7. Sprinkle remaining crumb mixture on top of the cheesecake layer.
  8. Bake for 25-30 minutes or until the center is set.
  9. Allow to cool, then refrigerate for at least 2 hours before serving.
