Ingredients

Scale
  • Base:
    • 4 cups chicken broth
    • 1 cup heavy cream
  • Vegetables:
    • 1 cup diced potatoes
    • 1 cup corn kernels (fresh or frozen)
    • 1 cup diced carrots
    • 1 cup diced bell peppers
  • Protein:
    • 6 slices of bacon, chopped
    • 1 cup cooked shredded chicken
  • Spices:
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon smoked paprika
    • Salt and pepper to taste

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove and set aside, leaving the drippings in the pot.
  2. Add the diced potatoes, carrots, and bell peppers to the pot, sautéing for 5 minutes until they begin to soften.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes, or until the potatoes are tender.
  4. Stir in the corn, shredded chicken, heavy cream, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for an additional 5 minutes until heated through.
  5. Return the crispy bacon to the pot, stir well, and adjust seasoning if necessary. Serve hot.
