- 1 tablespoon lemon zest
- 1/4 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, butter, sugar, and salt to form the crust.
- Press the mixture into the bottom of a greased 8×8 inch baking dish.
- Bake the crust for 15 minutes until lightly golden.
- In another bowl, whisk together the sugar, eggs, lemon juice, lemon zest, and baking powder for the filling.
- Fold in the cranberries and pour the mixture over the baked crust.
- Bake for an additional 25-30 minutes until the filling is set.
- Allow to cool before cutting into bars and serving.
Notes
- For a sweeter taste, you can add more sugar to the filling.
- These bars can be stored in the refrigerator for up to a week.
