Ingredients

  • Meat: 1 lb ground beef (or turkey), browned and drained
  • Beans: 1 can (15 oz) kidney beans, drained and rinsed; 1 can (15 oz) black beans, drained and rinsed
  • Vegetables: 1 medium onion, diced; 1 bell pepper, diced; 2 cloves garlic, minced
  • Tomatoes: 1 can (28 oz) crushed tomatoes; 1 can (6 oz) tomato paste

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat.
  2. In the crockpot, combine the browned meat, kidney beans, black beans, diced onion, bell pepper, minced garlic, crushed tomatoes, and tomato paste.
  3. Add the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper to the mixture.
  4. Pour in the beef broth and stir everything together until well combined.
  5. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors meld and the vegetables are tender.
  6. Before serving, taste and adjust seasoning if necessary. Serve hot.
