- 1 cup cottage cheese
- 1 cup oats
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- In a blender, combine cottage cheese, oats, eggs, vanilla extract, baking powder, cinnamon, and salt.
- Blend until smooth and well combined.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour 1/4 cup of the batter onto the skillet for each pancake.
- Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
- Repeat with the remaining batter.
- Serve warm with your favorite toppings.

- These pancakes can be stored in the refrigerator for up to 3 days.
- They can also be frozen for later use.
