Ingredients

  • Beef Chuck Roast: 3-4 pounds, trimmed of excess fat

  • Thyme: 2 teaspoons, dried or 1 tablespoon fresh

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef chuck roast with salt and pepper, then sear it on all sides until browned, about 4-5 minutes per side.
  3. Remove the roast and set aside. In the same pot, add the sliced onions and cook until caramelized, about 15-20 minutes, stirring occasionally.
  4. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Pour in the red wine, scraping the bottom of the pot to deglaze, and let it simmer for 5 minutes.
  6. Add the beef broth, thyme, bay leaves, and return the roast to the pot. Bring to a simmer.
  7. Cover the pot and transfer it to the preheated oven. Cook for 3-4 hours, or until the meat is fork-tender.
  8. Remove the pot from the oven, discard the bay leaves, and let the roast rest for 10-15 minutes before slicing.
