- 2 cups mixed bell peppers, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 cup carrots, julienned
- 1/2 cup teriyaki sauce
- 2 tablespoons olive oil
- 2 cups cooked wild rice
- Sesame seeds for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add sliced chicken breast and cook until browned and cooked through.
- Add the mixed bell peppers, broccoli, snap peas, and carrots to the skillet.
- Stir-fry the vegetables for about 5-7 minutes until they are tender-crisp.
- Pour the teriyaki sauce over the chicken and vegetables, stirring to coat evenly.
- Cook for an additional 2-3 minutes until the sauce is heated through.
- Serve the stir-fry over cooked wild rice and garnish with sesame seeds.
Notes
- Feel free to substitute any vegetables based on your preference.
