Description

Classic Strawberry Shortcake is a delightful dessert made with layers of fluffy biscuits, fresh strawberries, and whipped cream.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, mix flour, granulated sugar, baking powder, and salt.
  3. Add cold butter and mix until the mixture resembles coarse crumbs.
  4. Pour in heavy cream and stir until just combined.
  5. Turn the dough onto a floured surface and knead gently.
  6. Roll out to about 1-inch thickness and cut into rounds.
  7. Place on a baking sheet and bake for 15-20 minutes until golden brown.
  8. While the biscuits cool, mix sliced strawberries with powdered sugar and let sit for 10 minutes.
  9. Whip the heavy cream with vanilla extract until soft peaks form.
  10. To assemble, split the biscuits, layer with strawberries and whipped cream, and top with the other half of the biscuit.

Notes

  • For best results, use fresh strawberries.
  • Can substitute heavy cream with coconut cream for a dairy-free option.
  • Shortcakes can be made a day in advance and stored in an airtight container.
