Description

Indulge in the festive delight of Christmas Swirl Pinwheel Cookies, where the buttery, melt-in-your-mouth texture meets a rich, creamy flavor. Each bite reveals a beautiful swirl of vibrant red and green, reminiscent of holiday cheer, with a hint of vanilla and almond that dances on your palate.

Ingredients

Scale
  • For the Cookie Dough:
    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1 teaspoon almond extract
    • 2 ½ cups all-purpose flour
    • ½ teaspoon baking powder
    • ¼ teaspoon salt
  • For the Color:
    • ½ cup red food coloring
    • ½ cup green food coloring

Instructions

  1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  2. Add the egg, vanilla extract, and almond extract, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  5. Divide the dough into three equal parts. Leave one part plain, and color one part with red food coloring and the other with green food coloring, mixing until evenly colored.
  6. Roll each colored dough between two sheets of parchment paper into rectangles about ¼ inch thick.
  7. Layer the colored doughs on top of each other, with the plain dough in the middle, and gently press them together.
  8. Using the parchment paper, roll the dough tightly into a log shape, then wrap it in plastic wrap and refrigerate for at least 2 hours.
  9. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  10. Once chilled, slice the log into ¼ inch thick rounds and place them on the prepared baking sheets.
  11. Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
