Description

This Christmas Jello Cake is a delightful blend of creamy layers and vibrant jello, creating a festive treat that dances on your palate. The smooth, velvety texture of the cream cheese frosting contrasts beautifully with the refreshing, fruity jello, making each bite a celebration of flavors and colors.

Ingredients

Scale
  • For the Cake:
    • 1 box of white cake mix (15.25 oz)
    • 1 cup water
    • 1/3 cup vegetable oil
    • 3 large eggs
  • For the Jello Layer:
    • 1 box of raspberry jello (3 oz)
    • 1 cup boiling water
    • 1 cup cold water
  • For the Cream Cheese Frosting:
    • 8 oz cream cheese, softened
    • 1/2 cup unsalted butter, softened
    • 4 cups powdered sugar
    • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cake mix, water, vegetable oil, and eggs. Beat on medium speed for 2 minutes until well blended.
  3. Pour the batter into a greased 9×13 inch baking pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  4. While the cake is baking, prepare the jello by dissolving the raspberry jello in 1 cup of boiling water, then stir in 1 cup of cold water. Set aside to cool.
  5. Once the cake is done, allow it to cool completely in the pan on a wire rack.
  6. Once cooled, poke holes all over the top of the cake using a fork or skewer.
  7. Pour the prepared jello evenly over the cake, allowing it to seep into the holes. Refrigerate for at least 2 hours to set.
  8. For the frosting, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fluffy.
  9. Spread the cream cheese frosting over the jello layer once it has set. Decorate with festive sprinkles if desired.
  10. Slice and serve chilled. Enjoy your festive treat!
