Description

Deliciously moist chocolate cupcakes filled with strawberry jam and topped with creamy frosting.


Ingredients

  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup strawberry jam
  • 3 cups powdered sugar
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract (for frosting)
  • Fresh strawberries (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Combine flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Add eggs, milk, vegetable oil, and vanilla extract; mix until well combined.
  4. Stir in the boiling water until the batter is thin and smooth.
  5. Fill each cupcake liner about two-thirds full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool the cupcakes and create a hole in the center of each for the jam.
  8. Fill each hole with strawberry jam.
  9. Beat softened butter until creamy, then gradually add powdered sugar, heavy cream, and vanilla for the frosting.
  10. Frost the cupcakes generously with the fluffy frosting.
  11. Garnish with fresh strawberries, if desired.
