Ingredients

  • 500g Bread Flour
  • 150g Sourdough Starter
  • 350ml Water
  • 50g Cocoa Powder
  • 100g Sugar
  • 10g Salt
  • 200g Dark Chocolate, Chopped
  • 50g Butter, Melted

Instructions

  1. Combine the bread flour, cocoa powder, and sugar in a large bowl.
  2. Mix the sourdough starter with water in a separate bowl.
  3. Pour this mixture into the dry ingredients, stirring to form a shaggy dough.
  4. Knead the dough for about 10 minutes on a lightly floured surface until smooth and elastic.
  5. Add the salt and melted butter, continuing to knead until fully incorporated.
  6. Cover the bowl with a damp cloth and let the dough rise for 4-6 hours until doubled in size.
  7. Gently fold in the chopped dark chocolate.
  8. Shape the dough into a loaf and place it in a prepared bread pan.
  9. Let the dough proof for another 1-2 hours until puffy.
  10. Preheat your oven to 220°C (428°F).
  11. Bake for 30-35 minutes or until the crust is brown and sounds hollow when tapped.
  12. Cool completely before slicing to develop flavor and structure.

Notes

Use filtered water for enhanced flavor. Consider using a proofing box in cold environments.
