- 500g Bread Flour
- 150g Sourdough Starter
- 350ml Water
- 50g Cocoa Powder
- 100g Sugar
- 10g Salt
- 200g Dark Chocolate, Chopped
- 50g Butter, Melted
Instructions
- Combine the bread flour, cocoa powder, and sugar in a large bowl.
- Mix the sourdough starter with water in a separate bowl.
- Pour this mixture into the dry ingredients, stirring to form a shaggy dough.
- Knead the dough for about 10 minutes on a lightly floured surface until smooth and elastic.
- Add the salt and melted butter, continuing to knead until fully incorporated.
- Cover the bowl with a damp cloth and let the dough rise for 4-6 hours until doubled in size.
- Gently fold in the chopped dark chocolate.
- Shape the dough into a loaf and place it in a prepared bread pan.
- Let the dough proof for another 1-2 hours until puffy.
- Preheat your oven to 220°C (428°F).
- Bake for 30-35 minutes or until the crust is brown and sounds hollow when tapped.
- Cool completely before slicing to develop flavor and structure.
Notes
Use filtered water for enhanced flavor. Consider using a proofing box in cold environments.
